The first decision would be whether we start with a free version and convert it into a paid version or build a separate version.

There are evidence that free versions attract users faster than paid versions, e.g. our own product. Even after we declared the pad version as Freemium, the free version still has a higher speed attracting users. One explanation is the users do not read the title to know it is Freemium but mainly rely on category filters to find free App.

There are also examples showing that maintaining only one paid version is fine.

I think what we can do is to instead of doing a freemium and a paid version we make one version but have a trial period for it. I guess it’s self explanatory that the user will not be able to use the product unless they subscribe after the trial period is over.
